Capt Geoff’s Wahoo, Tuna and Leftovers Curry
Coconut milk ( coco leche )
Salt / pepper
1 – Drink the beer
2 – Chop all vegetables into large chunks , Finely chop part of ginger and also cut large slices of ginger. Finely chop a large clove of garlic and add 2 whole cloves of garlic.
3 – Pour coconut milk into large pan and add all veg, add the curry powder and seasoning to taste. Bring to boil and leave to simmer for 30 mins. Add seasoning.
4 – Chop the tuna and wahoo into large cubes ( large cubes prevent it breaking up ) Squeeze lemon to marinade and leave to stand.
5 – When the veg are fully cooked put butter into frying pan and sautee the fish cubes to give colour only. Do not cook fully.
6 – Add the fish cubes into the stock and leave to simmer. Do not boil as it will break up the fish cubes.
7 – Serve over rice.
