Fresh Tuna medallions in pasta with an avocado sauce

A substantial meal and quick to prepare.

Ingredients (for 2 people)
1/4 lb of fresh tuna loin
Half avocado (very/over ripe)
Clove of garlic
Olive oil
Parmesan cheese

Boil the spaghetti until ready to serve. Slice the tuna loin into small pieces but not too thinly chop the onion. Crush and finely chop the glove of garlic

Mash the avocado

“Sweat” the onions in a hot pan with a knob of melted butter. Introduce the garlic once the onions become transparent introduce the mashed avocado and switch off the heat but continue to stir briskly.

Drain the spaghetti and introduce the spaghetti into the frying pan together with sauce continue to stir.
Add the Tuna medallions into the spaghetti and allow the heat of the spaghetti to very slightly cook the surface of the tuna.

Serve immediately

A strong flavoured white wine goes very well with this dish.
