GINGER COCONUT BAKED MAHI MAHI

Inspired by tropical ingredients including coconut milk and mangoes, this melt-in-your-
mouth Ginger Coconut Baked Mahi Mahi is a signature dish from The Meridian Club dining
repertoire.
INGREDIENTS
o 4- 5oz Mahi Mahi fillets, skin removed
For the marinade and sauce
o 2 cups coconut milk
o 1/2 cup freshly squeeze lime juice
o 1 tbsp. ginger root, chopped
o 1 tbsp. salt, kosher
For the topping
o 1/2 cup flaked coconut
o 1/2 cup panko bread crumbs
For the gingered mango
o 1 shallot, minced
o 2 tbsp. ginger root, minced
o 1 tbsp. serrano chili, minced
o 2 cups mango, medium dice
o 1 TBS mustard seed
o 1/3 cup sugar
o 1/3 cup apple cider vinegar
Garnish
o cilantro leaves
o hibiscus petals
PREPARATION

1. Puree the coconut milk, lime juice, salt and fresh ginger in a
blender until smooth. Reserve 1 cup and set aside.

2. Pour the remaining puree into a shallow baking dish. Set the
mahi mahi fillets in the baking dish. Cover and let marinate for
2 hours. Turning over after 1 hour.
3. In a sauté pan, add just enough oil to coat the bottom. Cook
the shallots and ginger until soft.
4. Add chili and mustard seeds. When mustard seeds begin to
“pop” add in the sugar and vinegar. Let it reduce, about 5
minutes.
5. Add fresh mango and cook for 5-8 minutes . Remove from
heat and set aside.
6. Combine panko bread crumbs and coconut. Press mixture
onto the top of the fish. Bake at 350 degrees for 20 minutes,
or until done.
7. To serve, pour 1/4 of the reserved coconut puree into each
dish. Gently place a fish fillet in each dish. Surround with
gingered mango and top with fresh cilantro and hibiscus
leaves.
